How To Buy and Serve Cheese

A cheese seller will always be happy to offer a recommendation and a taste. Tell what you like, mention the food and wine you'll be serving and whether you want to be bold.

Try going to a cheese shop if your grocery store doesn't have somebody knowledgeable. Otherwise, you can also use your favorite cheese as a starting point of experimentation. If you like cheddar, try both American and English varieties, then work yourself up to a cloth-bound Cabot or a raw-milk English cheddar. As your palate develops, you'll be able to taste more flavors.

Put out an odd number of cheeses (3 or 5) assembled on your plate which works better visually. Choose sampling of the 5 different types.

Provide a knife for each cheese to avoid mixing the flavors.

Pair it well. Unsalted nuts and fruits, both dried and fresh make delicious pairs with sliced baguette. Cheddar goes with apples; Stilton with pears;
Sheep cheese like Manchego is good with quince paste; and blue cheese drizzled with honey.

Finally, select the wine by picking one that will match the flavor and intensity of your cheese. Light, crisp wines are perfect with fresh cheeses; heavy reds go with full-flavored ones;
Overall, white wines go well with cheese than do reds.
